We at RenderX, not only believe in this type of thing, we are using Wiki's for our own documentation (http://mediawiki.renderx.com/index.php/DiType_User_Guide).
We have integrated several of these technologies into one application -- MediaWiki for lite content management, Wiki2FO for conversion to XSL FO and our own DiType server for formatting into PDF on the fly from the content. The final product is Docutype to be released next week, supporting formatting for PDF and eBooks.
We have some demo pages at http://dash-of-pepper.com for formatting any Wikipedia or Wikibook into PDF just from the URL or the above link to format our own documentation to PDF.

Sounds great - how are people selecting which articles to turn into an ebook? I'm on a project that will do wikislicing out of Wikipedia for the One Laptop Per Child project. See http://wiki.laptop.org/go/Projects/Wikislice for details. We're writing use cases now and want to get input from teachers who want to create curriculum from Wikipedia pages. We'd love your help if that's the kind of project that interests you.
