I had, on one of my Ubunut 8.10 test system, done a similar thing, and I have to say that when I installed Ubuntu 8.10 on a different system, I reverted to the base Ubuntu source 2.4.1. I have 3.0 on OpenSUSE 11.1 though.
The reason I reverted was that the repository I had found and enabled and installed from did not really provide a well integrated OOo 3.0, and it was in fact not very stable.
Your newer version looks like it might be better, from the outside looking in, but with 9.04 just around the corner, I plan to just wait. My 9.04 test system is actually running very nicely for an Alpha, and it looks like I'll be jumping to 9.04 everywhere I have 8.10 now as soon as it is GA. That or Mint 7.
